Cereal Treat



I make these on Halloween and my kids love them. Like they need more sugar on the most sugary day of the year! I can't for the life of me remember which magazine that I found this recipe in.  I copied this down from a magazine in the orthodontist's office about five years ago, so I am sure many of you have seen a variation of this before, it's basically a spin off of rice crispy treats. I hope you enjoy!


Ingredients:

5 cups of Peanut Butter Captain Crunch
1 bag of marshmallows
1-12.6 oz bag of M&M's
3 Tbsp of butter
1 Tbsp of peanut butter (I have made this minus the peanut butter & it was still great!)

Directions:


I both line my pan with wax paper and spray the paper with cooking spray.



Melt the butter, marshmallows  and peanut butter over medium heat until completely blended. Keep stirring the entire time or it can burn.



Add in the cereal and then the candy and start stirring and mix as quickly as possible. It's amazing how fast this will start setting up. Before I add the cereal and candy I spray the spatula with cooking spray. It will help keep things mixing together without sticking too badly to the spatula.


When things are nicely mixed quickly move to your pan and spread it out evenly.


Voila! Easy peasy!

The Pioneer Woman Cooks






I love Ree ya'll! She seems so sweet and genuine and comes across as someone you would love to have as a friend. I have both of her previous cookbooks and love them. Everything that I have made from them have come out great, even if my results weren't as pretty as her great photographs. I love the way that she has photos of each step throughout the recipe not just the finished product. I pre-ordered my copy and it should be here today, I will be peeking through the curtains all morning looking for the UPS man carrying my little brown box with the smiley face on it. After I have the chance to drool over the recipes and pictures I will report back and will start cooking from it soon. I bought the hard copy, but the eBook comes with demonstration videos and music, so it was a difficult decision. The eBook is not scheduled to be released until November 12th. so I had to go for the physical book but I may have to be indulgent and get both. I hope that you enjoy the little video clip.

Chocolate Pumpkin Cupcakes


I will be featuring pumpkin recipes up until Thanksgiving in celebration of this time of year where most of us cook with pumpkin. I originally found this recipe at AllRecipes but I have tweaked it a bit. However, I have to give you a warning. If you taste the batter you may have a hard time just taking a small taste, it is that good if I do say so myself! The addition of the cinnamon and vanilla does something to the chocolate and pumpkin that turns up the flavor to a wonderful level. These are so simple to make you may find yourself making them throughout the holiday season.  This is supposed to make 24 cupcakes, but I have never been able to make a box mix make 24, I always get 23 and that by scarping the bowl dry. I guess that I use the wrong size scoop, but I like a decent size cupcake! These cupcakes come out so moist that they all but slide out of the cupcake liners. They are truly yummy and pair with coffee or tea like a dream. I never frost these, they are too good all by themselves!

Ingredients:



1 (18.25 ounce) package chocolate cake mix
 1 (15 ounce) can pumpkin
 2 eggs
 2 tablespoons vegetable oil
1/3 c mayo
1 tsp. vanilla
1 tsp. ground cinnamon

Directions:

Preheat oven to 350*

Mix together all of the ingredients until the batter is smooth, about 3-4 minutes.



Divide batter into lined cupcake pans.



 Bake for 15-20 minutes or until a toothpick comes out clean.

Pico De Gallo


I learned to make this a while back and it is so good that you will want to drink the juice that forms in the bottom with a straw. Yeah, it's that good! Make this a few hours ahead to let the flavors meld.


Ingredients:

1 bundle of fresh cilantro
1/2 of a red onion
2 tomatoes
Juice of 1/2 of a lime
1/2 jalapeno
1 tsp finely chopped garlic
1/4 tsp salt

Directions:


I chop the jalapeno as small as I can without making mush. I don't like biting into bit chunks of jalapeno.


I chop the onion quite a bit bigger.


I very roughly chop the entire bundle of cilantro. I LOVE the flavor. If it's too much for you start with half and go from there. This is more like a cilantro salad since I love it so much. Add all of the ingredients in a large bowl and mix together thoroughly. I have eaten this right away, but if you let it sit in the fridge for at least an hour or two it will be even better.

Pulled Pork Tacos


This is a super easy and very flavorful version of pulled pork that I make regularly. There's almost nothing to it, it goes in the slow cooker, tastes great, and there's always left overs which are even better! You can use this pork for nachos and in meat buns as well. I'll do these versions soon.



Ingredients:

4-5 lb pork butt
Chicken Fajita Seasoning
3 Tbsp. minced garlic
1 jalapeno with cut 3 slits into it
3 Tsp chicken granules (You can use 2 bouillon cubes as well)
1/4 c water

If you can't find this brand of fajita seasoning you can also use Goya, the flavor is different, but it is still yummy.


Directions:

Generously sprinkle the seasoning on both sides of the pork butt then message the garlic on both sides.


Add 1/4 cup water, jalapeno, and chicken granules to the bottom of cooker. Then place the pork butt in the slow cooker fatty side up.


Cook on high for 3 hours then turn down to low for another 3 hours. If you want to let it go all day just put it on low and cook for 8 hours. When done you should be able to easily scrape the fatty layer off.



Remove the meat from the slow cook and pull apart with 2 forks. At this point it should be so tender that you can barely scoop it out of the pot without it falling apart!


I use my handy dandy electric griddle to warm the tortillas.


I always make home made pico de gallo when I make this and we like to add sour cream as well. That's just how we roll in this house!

Homemade Bread Cookbook Freebie



This is a nice freebie, each recipe has a nice picture along with it. The recipes look great like the one for cinnamon raisin bagels, chocolate chip bagels, and berry scones. There are also some unique recipes in it like one for Coconut Lime Loaf which I had never seen before so I will definitely be giving that one a try!

This is a great Nook freebie.

Love Food Classics Freebie



This Nook freebie is a good one! The pictures are wonderful and there are many recipes that I have already bookmarked to try. The only glitch that I could find is that I can't view this title on my Nook app for Kindle, when I went to find it I got an error message saying that this title could not be viewed on this device. Boooo and hiss! But it views just fine on my PC with no trouble and it is lovely so I suppose that I will stop complaining about something that I got for free!

Nook Freebies

Over the weekend I received a message from a reader gently reminding me that not everyone has a Kindle and that some people actually like the Nook better and that when I post the freebies she has to go to B & N to see if the same thing is available through them and that it would be nice if I could post some Nook freebies as well. Guilty! I am sorry that I have not featured freebies for the Nook and I promise to stop being a Kindle snob! The oversight was not done maliciously and I receive no compensation for recommending free books, I simply didn't think about the fact that I may be leaving some people out of the freebie goodness. I have added the Nook app to my Kindle so that I can also partake of the freebies from B & N and take a look through the freebies before I post them. Southern Cornbread




This cornbread recipe is a staple in my house.It's a basic recipe that has been tweaked a little to fit our taste. I hope you like it!

Ingredients:

1 1/4 c all purpose flour
3/4 c. yellow corn meal
1/2 c sugar
2 tsp baking powder
1/2 tsp salt
1 c milk
1/2 c  vegetable oil  (1/4 for mix & 1/4 c for skillet)
1 egg


This is the brand that I always use.

Directions:

Pre-heat the oven to 400*
Pour 1/4 c vegetable oil into cast iron skillet, coat entire inside of skillet and place in the oven for 10 minutes or until the oil is rippling and extremely hot. While the skillet is heating thoroughly mix all of the ingredients.


Pour batter into skillet, it should be screaming hot. If the batter does not instantly puff up and start bubbling and cooking around the edges, your skillet was not hot enough. It should look like this:


Cook until golden brown and knife comes out clean, about 20 minutes. When it is done I melt a half stick of butter, pour it over the top and brush it all over the top.


Let it sit for a minute or so and it will all soak into the cracks and crevices.


 We eat this with all kinds of meals. Chili, fried chicken, beans, and soups.
