As far back as I can remember, Mexican food has been my absolute favorite. However, it wasn't until recently that I discovered true authentic Mexican food. I had always visited the big chain restaurants with friends. Even though I loved this food, what I discovered later would make that food look like table scraps. 

I have spent the last two years mentoring and tutoring Latin American students helping to teach them English. Although I have helped them improve their English, I have learned far more from them. 

After spending time almost everyday with these amazing people it is impossible to not to love them. Their culture, traditions, and especially their food, there is little not to like about them. One of the best things about spending time with them is learning to cook their food. 

I really feel that most people do not know what real Mexican food is. To many, Mexican food means visiting the local fast food restaurant and ordering a taco at the drive through. For others, visiting the local sit down restaurant is adequate. It is sad that what they think is Mexican food, is nothing more than Americanized Mexican adaptations. They sound Mexican, but if you travel to Mexico you would not recognize the food with the same name. The closest you will get to real Mexican food is to visit one of the small taco stands. 

For this reason I wrote this Mexican cookbook. I want to share the secrets to cooking real Mexican food so that you can enjoy the real thing from your own kitchen. From the basic taco, to chicken chilaquiles, to other foods you probably have never heard about. This Mexican cookbook provides the essentials to cooking Mexican food. The Mexican recipes in this book are the contributions of my many friends who have been generous enough to share with me their secrets to great Mexican food.
