Brownie Cups



I love brownies and I love to add mix ins to them to add a little "umph" to them. Here's two versions that I do that is super easy but so yummy. 

Ingredients:

Favorite box of brownie mix, but you need the 13x9 family size
1/4 c Peanut butter chips
1/4 c caramel bits
2 tsp. flour
12 foil muffin liners




Directions:

Prepare brownie batter according to package directions for the fudgy brownie.  In separate bowls mix the caramel bits and peanut butter chips with 1 tsp of flour. This will keep the bits from sinking to the bottom of the brownies.


Fill muffin liners with brownie mix, then sprinkle 6 cups with caramel bits and 6 with peanut butter chips. Use a fork to gently mix the bits into the brownie mix. It's important to use foil liners as they make it really easy to remove the brownies. 



Bake at 350* for about 20 minutes, start checking them at 15 minutes. They are done when you can insert a knife and it comes out mostly clean. Since they are the fudgy version you don't want to over cook them. They will puff up and look all pretty, but after they begin to cook they will start to deflate a bit, don't worry that's what is suppose to happen!


If you really want to go all out you can serve these with a scoop of vanilla ice cream, add some whipped cream and a cherry and you have an awesome brownie sundae.
