Loaded Mashed Potato Bake

This is a super easy but yummy potato recipe. It's really decadent so this is not for the feint of heart!


4 Russet potatoes
1 small head of broccoli-divided into smaller florets
3 green onions-diced
1 cup shredded cheese of your choice
1/2 c. sour cream
4 oz. cream cheese-softened
1/2 stick of butter-softened
1 tsp. salt
1 tsp. black pepper


Cut potatoes into fairly small cubes so that they cook faster. Boil until fork tender. Once done mash potatoes to the consistency that you like, I leave mine slightly chunky for texture. Mix potatoes and the remaining ingredients until thoroughly mixed. Pour into a well sprayed casserole dish. Bake in a 350* pre-heated oven for about 30 minutes or until it starts to bubble. 

Yes, that's the butter bubbling through the top...
